HOW DO WE PERFORM OUR MISSION:

Hospitality:
Anyone can show or reveal acts of hospitality; however, your intent is vital, and your heart
must be pure for your inner being to match your outer being. If we complain about the service
for taking care of a guest, we have not shown true hospitality. Hospitality is the glad reception
of a stranger; you engage with both your hands and heart. Hospitality must also be shared with
the people you work with as well.

Love:
WE DO THAT BY APPROACHING our guests with our heart first. We create authentic
experiences for our guests, not transactional experiences!

Listen:
We LISTEN to our guests. WE MAKE SURE WE ASK FOR ALLERGIES OR DIETARY RESTRICTIONS
WHAT THEY ARE CELEBRATING.
WE PAY ATTENTION to their nonverbals:
(ARE THEY SHIVERING, did you bring them a blanket) do they dislike something, do they look
frustrated, did you address with a manager).

Kind:

Saying please and thank you, letting someone through the door first, picking up trash that’s on
the floor, looking out FOR your teammates in need that includes BOH and FOH.

Encouraging:
Celebrating each other, helping others, trusting your teammates

We’re here for the guests. We’re here for the guests. We’re here for the guests. We do
whatever it takes to make sure guests have a great time. We strike up conversations
with people who are dining alone. We invite people to try things they’ve never had. We
never leave people waiting on hold. We don’t mind when people add guests to a party
at the last minute. If a guest mentions she’d like a pumpkin spice latte, we run to the
store and buy one for her. We notice when guests aren’t 100% satisfied...before they
say something. Tableside is where all our talk about making people happy meets reality.
We bend the rules, jump through hoops, and do whatever it takes for the guest. We
never say no.

ï‚« PRIDE
Life is short. We want you to be proud of what you do. If you’re not, it’s time to do
something else. If you wash dishes, make them sparkle. If you make drinks, make sure

every single one is perfect. If you wait tables, take pride in each guest’s experience.
Take pride in your appearance. When you tell your friends where you work, they should
be jealous. When you go home and look in the mirror, you shouldn’t be embarrassed
about anything you did that day.

ï‚« PROFITABILITY
Money is not an afterthought. It allows us to stay in business, which makes everything
else we do possible. We are frugal, not cheap. We use the polish rags for polishing and
not wiping down tables, we don’t throw away rags after one use in the linen basket. We
use the entire loaf of bread and don’t leave the ends for waste. We have a formula,
and the formula is set up to make us profitable: proper portioning, smart scheduling,
care and maintenance of equipment are just as important to a restaurant’s survival as
great food and drinks. If we deliver on the great experience we promise, our guests will
be happy to pay for our quality offers.
