An intimate multi-course dinner celebrating Shafer Vineyards, where thoughtfully crafted dishes are paired with one of Napa Valley’s most iconic wines.

First Course

Shafer Red Shoulder Ranch Chardonnay
Carneros

Seared day-boat scallops, smoked cauliflower purée, beurre blanc, and Meyer lemon — balancing richness with bright coastal acidity.

Second Course

Shafer Relentless
Napa Valley

Braised short rib ravioli in a creamy wild mushroom sauce, finished with freshly shaved truffle.

Third Course

Shafer Merlot
Napa Valley

Truffle-infused mushroom risotto with maitake mushrooms, Manchego, cream, and spinach oil.

Fourth Course

Shafer Cabernet Sauvignon TD-9
Napa Valley

Iberico pork tenderloin with berry gastrique, micro greens, and smoked sea salt.

Fifth Course

Shafer Cabernet Sauvignon One Point Five
Napa Valley

Medal-gold Australian Wagyu strip steak, parsnip purée, confit sherry tomatoes on the vine, and red wine reduction.

Dessert Course

Pedro Ximénez 1827 Sherry

Tiramisu affogato with ladyfingers, whipped espresso mascarpone cream, vanilla espresso gelato, and a warm espresso shot.
